It's actually black not brown, it's just that the top coat is very thin and almost see through.

If you ask for extra heavy they will use the butt for certain pieces like the back or the upper yoke.
Not every jacket gets butt, but not every jacket is 100% front quarter.
Regular horse hide comes from the entire horse, FQHH comes from the front quarter of the hides.

The collars from my J23 and J 24 are not interchangeable, the snaps are all at slightly different places, a collar needs to be matched to a specific jacket.
As @oneterrifichog said Stuart asks that you send the jacket or collar back when ordering a new collar so he can make sure the new one fits.

Windflaps are only necessary on a motorcycle jacket.
His jackets aren't motorcycle jackets, thus they IMO don't need a windflap.
On foot you will never walk/run fast enough to get wind ingress through the zipper, even strong wind won't get through.
It's really only necessary at speed on a bike.
