You might also want to check out tactical tailor in Washington state. I have one of their cotton caps that a buddy in the special forces swears by. Color is coyote, its adjustable, and heavy duty; but, it is a tactical cap and has velcro for patches on the top (for an IR tab--I don't need one)...
I have a US Wings made-in-the-USA Indy in goat. I've had it worn it for three winters and I like it. I got the goat for durability and looks--thinner leather than cow and nearly the drape of lamb...but tough as an old goat! I'm happy with the jacket...but, I wish they were made in chest sizes...
