Can't help you with the steer version though, I've never handled this version. However, it was baggier and less true to pattern.

Bovine is an unusual way of describing it (it was tailored in Italy), and strictly a cow is a female 'bovine', whilst a steer is a neutered male. As mine was missing any obvious...er...clues then I couldn't tell without conducting a DNA...

Might be necessary to remove the top 'stop' from the 'male' side (prising it apart), remove the slider from that side (carefully) then slide it down again. Replace the stop (crimp it tight) and you're done.
Try the simpler routes first though.

Equally, I have no problem with observations being voiced about the quality of the execution of the design - neither appear to have a Peter Pan collar IMO, although the treatment of the leading edge of the shawl collar has been treated differently. You'll see similar changes in the LVC Menlo...
