That's a very nice straight razor indeed.
And you're a courageous chap to actually shave with it. I inherited my father's straight razor. A few years back I decided to try it out.
But I chickened out! Resorted to my safety razor, sad to say.

The tape measure should just be snugged up around your head. You're at least a 7-1/8 using US sizing.

I've successfully removed greasy leather preservative stains from fur felt hats, which staining was several months old. Your mileage may vary, bearing in mind that a greasy food stain could have various ingredients included therein.
I would try dry talcum powder as a poultice on the oily stains, leaving it in place overnight while positioning the hat so that the splashed area was facing down thereby harnessing the assistance of gravity. This might take several applications.

I've considered using a sheet of cellophane food wrap to protect the liner, tucked in place behind the sweat. Sort of a liner over the liner & replaceable for pennies with minimal effort.
