Some left over cooked chicken diced into small cubes, thrown into a pan of hot olive oil, (about two tablespoonfuls,) with a fillet of cod, also diced like the chicken. Add garlic, onion, red pepper and risotto rice. Stir until all the ingredients are coated in the oil. Cook on a high heat for about ten minutes. Pour in a quarter pint of warm water mixed with a glass of dry white wine, reduce heat, add thyme, rosemary and saffron, simmer for about twenty minutes. Finally increase heat slightly, add a quarter pound each of mussels and shrimps, cook for a further ten minutes, finish with a handful of pine nuts. Turn heat up high. Keep tossing all the ingredients to prevent burning. Just as the mixture starts to catch on the pan, serve onto pre-warmed plates. My version of paella. Enjoy with a chilled glass of the white wine.
