Our first day of really nice weather, so Hubby is grilling.

Sirloins (with my special house-made spice rub), corn on the cob, fresh made grilled jalapeño poppers, and green salad with Ranch.

Italian sandwich (ham, salami, pepperoni, provelane, roasted red peppers, and olive tapenade. Spicy red pepper hummus with pita bread and fresh veggies. Spring salad of baby kale, brussel sprouts, carrots radishes, strawberries, and cashews, with a ginger/sesame dressing. Couple of dos equis and a praline latte for dessert.

Brined a big pack of chicken thighs today, so Hubby is grilling them for dinner. I also made smashed potato salad.

91° here today. Yikes.

Supposed to be this hot again tomorrow (20° temperature jump overnight = miserable me), so he is grilling extra chicken tonight for us to have tomorrow. Cook once, eat twice.

Oh, I definitely like that idea. Although, I don't know that tomorrow's dinner would make it to tomorrow evening around here: highly doubtful.

He leaves for work at 10:45 a.m., so his will go with him then. That is how the rest will make it to dinner. I think I will make pasta salad to eat tomorrow with it.
