We are hosting a vegan friend for dinner so I just finished prepping a Spaghetti squash removing the stringy pulp and that will substitute for the pasta. Topped with a fresh tomato and mushroom sauce & grated parmesan cheese. Then a side of steamed cauli topped with a lemon balsamic vinegar dressing.
I am cheating and making a side of meatballs to add at the table to my plate.
The girls were gone last night and the missus made a seven layer Mexican dip for work yesterday so I grilled a strip rubbed down with hot Mexican chili powder to go with it. Ice cold PBR.
My mom kept the kids yesterday evening, and when I picked them up she sent ho.e a big hunk of leftover ham. I think I'll fry some up with potatoes and scrambled eggs and make some red chili gravy to top it all off with.
Spaghetti and meatballs with sausage, sweet and hot. As per my Mom's recipe she was taught by my Noni. None of this out of a jar stuff here, I make enough to freeze half for another 5 meals in a month or two. Nice to have a huge bowl sitting in the fridge all week.
