I had a nice bowl of Quaker Oats Oatmeal with a little margarine, a spoon of strawberry preserves, and some milk mixed in

since I had bacon, eggs, hash, toast the day before, I needed to eat something more healthy to balance it out on my next breakfast meal.

I'll probably have hot cakes with maple syrup and butter tomorrow. :)

Yesterday, toasted bagel & whipped cream cheese, fruit salad (mango, blueberries, Bing cherries, red grapes, watermelon, black plum).

Today, popcorn & Reeses pieces. Took Lily to see Trolls at the kids $1 summer movie series. Had to leave just after 9 to get there, so didn't eat first. Popcorn it is!

Sourdough toast with slices of perfectly ripe avocado & sharp cheddar, crispy bacon on the side, cup of Lady Gray tea.

Hubby & Lily had American cheese omlette, buttered sourdough toast, crispy bacon, and avocado on the side. Hubby had unsweetened lemon-ginger probiotic tea (fighting a cold), Lily had Constant Comment tea with honey & lemon (also fighting a cold).

I saw this recipe on FB and made my version of it this morning. Lightly fried potato (shredded) mix with 3 beaten eggs and a bit of onion. Spiced with lots of pepper, garlic powder, and a bit of ancho powder. Mix it all together in a bowl and place half mixture in the CI fry pan cover with cheddar and place the balance on top finishing off with a bit more cheese. Fry at medium for about 5 minuts and place in a hot oven for another 5 mins finish off under the broiler to char the cheese. A potato/egg torte.
Enough for tomorrow;s breakfast as well.

Substitute the ancho powder for bacon and it sounds pretty darn good.
