Substitute the ancho powder for bacon and it sounds pretty darn good.I saw this recipe on FB and made my version of it this morning. Lightly fried potato (shredded) mix with 3 beaten eggs and a bit of onion. Spiced with lots of pepper, garlic powder, and a bit of ancho powder. Mix it all together in a bowl and place half mixture in the CI fry pan cover with cheddar and place the balance on top finishing off with a bit more cheese. Fry at medium for about 5 minuts and place in a hot oven for another 5 mins finish off under the broiler to char the cheese. A potato/egg torte.
Enough for tomorrow;s breakfast as well.
I had bacon in the fridge but got lazy or too hungry to bother....next time however......Substitute the ancho powder for bacon and it sounds pretty darn good.
