As far as I understand, Giles and Haraki quickly went beyond producers and distibutor to become partners. From a business perspective it is certainly better for them. They have better control of their brand and can avoid their image being diluted by the decisions of others.

While it may sound outrageous as an idea, I found that they are easier to match than I thought… Or maybe it is just me?

It gives me more range of motion than the speed demon in a similar leather. Deer will definitely give you more flexibility, but it is not as good under the rain (not sure how it really holds up under the rain, the horse kept me completely in 3 hour ride under heavy rain)

The suburban can easily become a daily wearer, it was my first LW jacket. The Sierra looks as easy to use and wear. They will both work well in deer. Which colour are you thinking to go with?

The deerskin is softer and drapes better than HH. But on the other hand it is easier to scratch and not as water resistant.
In terms of durability, it really depends on how you use it, but if we are talking normal day to day activities, the jacket...

I think the most important bit os to manage your expectations. You will not get a jacket exactly as you envison it and it will not fit that way either.
With that out of the way, a jacket that has a good pattern will fit many different body types, yours included. So, my first advice...
