My Dad's grandparents came to Chicago to work in the Stockyards, so it felt like we were carrying on a proud tradition of not only our region, but of our family.

My dad broke into the stockyards at fourteen or fifteen, stopping school and got arrested for truancy. He returned at sixteen and stayed
until he was drafted for Korea, then resumed work as a cattle buyer for Wilson Packing upon his return. I remember my first steak
at the Stockyards Inn when I was eight or nine and walking through the muck and mire of the yards during cattle inspections with him.
The cattle business and the yards were in his blood.

Chicken-bacon-Ranch pasta salad. Sourdough toast on the side.

Chicken breast (cooked in olive oil, s&p, garlic), diced
Bacon
Yellow & red cherry tomatoes, halved
English cucumber, diced
Sharp cheddar cheese, cubed
Ranch dip (homemade with Mexican sour cream)
Mini penne pasta

Dump it all in a big bowl, mix, check if it needs more s&p. Chill. Enjoy. :)

That sounds like a great salad. A little English with the cucumber, Mexican with the sour cream and Italian with the pasta. A tour of the world in one tasty meal. I might just use your recipe sometime this week. :)

Lily ate two servings tonight (thanks, growth spurt!), and begged for leftovers for her school lunch tomorrow. She has a thermos-full waiting for her to devour. It is really, really tasty.

Stir fry with green onions, celery, red pepper, mushrooms, bean sprouts, green cabbage, grilled chicken strips and Worcestershire sauce. Rice a Roni. Glass of tomato juice.

My wife took over the salad operation this evening. She made a layered salad that was super!
  • iceberg lettuce, chopped
  • 4 tomatoes, cut into wedges
  • 8 ounces baby spinach
  • Hard Boiled Eggs, chopped
  • Salt and freshly ground black pepper
  • bacon, cooked and chopped
  • green onions, thinly sliced
  • grated sharp Cheddar
  • peas
  • Dressing:
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 1/2 teaspoons sugar
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley

We got a stellar email from Lily's teacher that Lily's hard work (and my blood, sweat, and tears) are paying off by significantly raising her math grade. It was such good news we went out for celebratory pizza. Lily & I shared a Canadian bacon, pineapple, pepperoni, & black olives combo, Hubby had sausage, mushroom, & jalapenos.

Other than the packets of salt, pepper and mayo you get when you either bring home or order in pizza, burgers, etc., I wouldn't have had any of those ingredients in my house.

Very impressive and tasty looking salad.

Chicken a la King, if that is old fashioned enough ha ha

Improvised this to use up a package of Spinach Fettucine noodles. Made the topping with a can of Campbells Chunky cream of chicken noodle soup hopped up with some sliced mushrooms, green onions, and red pepper left over from last night's recipe. Fresh ground black pepper and some Parmesan cheese. Glass of tomato juice.

Green noodles with white sauce containing red and green made a pretty plate.

Last night BBQ'd chicken thighs with Stubbs spicy sauce, steamed broccoli and couscous.

Beer can chicken barbeque is also great. Open top Miller Lite can with beer, barbeque sauce poured in; place bird over can, brush sauce over bird.
But cook corn on the cob over grill...can't eat broccoli.:eek:

Last evening had pub grub pork chops, goin' hog wild over these;), caught Harvard-Marquette; Cornhuskers and Mississippi State.
Same said tonite for Michigan-Montana. Duke is against Iona.:D
