The reason I ask is we make this regularly about once a month and your description sounded very much like their recipe. Apologies if I'm wrong but just sounded very similar.

This was the recipe I used for the mayo & pickled veggies. The meat was ground pork, soy, ginger, garlic, fish sauce, cilantro, scallion, and lime juice mixed together and cooked in a tiny amount of toasted sesame oil.

Can't go wrong with a banh mi, one of the tastiest sandwiches/filled rolls on the planet.
Do give the Ace Bakery recipe a go as it's seriously tasty, especially the pork if you marinate it overnight. I'm a chilli-fiend so I tend to add a splosh of sriracha or chilli oil to mine as well as the chilli mayo
