Placed my order with Simmons Bilt today. I was planning on buying the Simmons/Iron Heart collab tailgunner on Monday but today my leather samples arrived from Scotland. I owned this older model in brown, size 44. I'm 181cm 84kg and I feel it fit well, pretty slim in the chest, and the sleeves were long, but not unworkable. Here are some photos.

Well zipped up I would have preferred a little more room in the chest, so it might have a nice amount of ease for your chest. And it was tighter around my waist as well, but I don't mind that. So for me it was a tight fit but ok, for you it maybe a good fit. I think this pattern just has long sleeves, no problem when the cuffs are zipped anyway. Shoulders sound about right for you.
