I would imagine the scarcity, or perceived scarcity, in sheepskin would have more to do with increased demand (such as China buying it, as Butte mentions) than decreased supply.
Vintage Brooks cafe racers are really nice, esp. if you get one from the 60s. You can date them quite easily from their labels (I used to have a link to help with that but can't find it at the moment). They do seem to be getting a bit more expensive on ebay, last I checked...selling at auction...

Great looking jacket and perfect fit. Consider yourself lucky...You could spend a lot of time and money trying to achieve that fit even going the custom route. Enjoy wearing and post pics in a few months when it's breaking in.

From what I've read, people have different experiences with the amount of bleeding of the cordovan fqhh. What seems consistent is that it eventually 'bleeds out' and then your fine.
Man, if you live just a short trip from the Aero factory, go to the factory! No doubt you'll learn a lot and probably end up with a stunning jacket.
If you end up going with Belstaff, go vintage. The older ones are better jackets.
