Crown shaping isn't that difficult on reasonable quality felt - do it dry to get it roughly how you want it, then use steam to set it. If you don't like the results you can re-steam and re-shape.
Thanks for the comments on the Panizza, definitely one of my favourite hats. I'm still on lookout for more that have a moderate or wider brim.
