I always ask Art to send my hats open-crowned, but I'm pretty sure he'll pre-crease it for you if you ask.

Two and a half inches is pretty wide for hat ribbon, I don't know if you'll be able to find any nowadays. If you can go a bit narrower, these folks sell cotton/rayon hat ribbon, but only in 1 1/2":

Yep, I pop the crown open and flip up the brim at the end of the day after wearing the hats. That way, no permanent creases develop, and each new day is a new, unique crease!

Almost all of my favorite hats are open-crowned. I only like pre-creased crowns on stingy-brims.
