For those of you headed to Las Vegas after May 1, The Golden Steer will be serving lunch. If you can't make it in the evening, try to get to this classic Vegas location at lunch.

Last really good steaks that I did not cook myself (very smugly said) were in Vegas. One at Smith & Wolensky (certainly mispelled) and the other at Bobby Flay's Mesa Grill. I recommend both.

Las Vegas is a good spot for steaks and steak houses.

The larger hotel casino's will usually have an in-house steak house and every chain of high end steak houses like Ruth's Chris is represented there.

The Steak House at Circus Circus is a good in-house place, and everyone usually says: "Too bad you have to go thru Circus Circus to get to it!"

I had a great steak at The Golden Stear there in LV a while back. We stopped at the Town Pump and picked up a selection of uber Zinfandel (the red one) and brought there. Asked for the sommelier and it was a lady, we then invited her to hav e a glass of what we brought so she could try something not on the list that we really liked. She waved the corkage fee for us.

Sorry to bring this back from the dead, but we have a place in Wichita that's the diner part of an old 1950's motel that serve's mesquite steaks and chicken. It's not GREAT, but then if you blow $15 a person, you're into serious overkill.

It's funny that you resurrected this thread today. Tenuki and I went to Morton's Steakhouse in Seattle this weekend and had a great meal. Quality steaks, classic atmosphere, a good wine cellar, and they even offered to check my hat! And handled it by the brim! We had a wonderful time.

Personally, I like to marinade and Bar-b-Q my steaks. Chicken gets smoked with orange peels.

But the one place I wouldn't mind going for a steak, is the teamsters hall. For a tradesman or construction worker, you can't beat it.

Edit: Waaaa! I miss Ponderossa.

Hi, o.k. that's a new one on me, do I treat the orange peels like mesquite or hickory chips? Soak'em for a while then put them in a tin pan over the propane (or just dump on the charcoal)? The whole concept of burning orange peels for any reason at all never occurred to me. [huh]

What's better is to smoke the chicken with smouldering logs (anything maple etc. not much heat though), with the afforementioned orange peels on them. orange and lemon zest is fantastic too. You need a really sharp knife, and just remove the colour from the peel. and dice it. Lemon zest is good on everything even in tea.

Here's a good too. If I have frozen chicken Instead of nuking it, I use a stainless mixing bowl on the element, and fill it with pickle brine. Then simmer it till thawed.

Here a really traditional one, soak meat in milk and garlic over night. Gives it a nice texture. Good for game meat.

It's good to mix it up a bit.

I've been making cheese recently, and I have discovered that marinating chicken in the leftover whey makes it incredibly juicy and gives the crispest skin ever. And I have roasted a lot of chickens! So I can see that marinating game meat in milk would be very successful.

Many people know that game meats are, well, gamey. They have strong flavors that may put off people that are used to mostly beef, chicken and pork.

I was told that soaking in milk was done to lessen the strong flavors.

Sacramento has the big chains like Mortons and Ruth's Chris. They are dependably good. From this thread I think I am going to have to try Cattleman's.

If you're in Phoenix, aside from the chains, you should try Durant's. It's one of the oldest restaurants in town and the place where the politicians and lobbyists eat. Just remember that you don't enter from the street, you enter from the back parking lot and walk in right through the kitchen.

Other good steakhouses are Drinkwater's City Hall, Fleming's, Donovan's and Mastro's. I've also heard good things about Modern Steak but it has opened since I moved so I have yet to visit.

Cattleman's near the stockyards in OKC- The way a steak house should be. My dad remembered going with my Great Gran Pa, when he was a kid in the 30s. I think we had the same waitress when Pop and I went in 2005! They don't change what's not broke.

Jamil's in Tulsa is always a favorite of mine.
