Hubby & I have been enjoying his recently purchased Weber grill. (He started a Facebook page for our grilling adventures - Bar-Raiser BBQ.)

Tonight we made chicken two ways. Lily & I had bruschetta chicken (marinated chicken in garlic & basil vinaigrette, grilled and topped with mozzarella and diced heirloom tomato and basil chiffonade).

Hubby had Pollo Loco (chicken seasoned with Hardcore Carnivore's Meat Chelada seasoning, topped with a grilled Aneheim pepper and pepper jack cheese).

They had bell peppers on sale so I bought some of the orange ones and made stuffed peppers, vegetarian style. The filling was rice, mushrooms, onion, parsley, garlic, and spices. Baked in a pan with tomato sauce, served with basil pesto. It was very good, it is hard to come up with good tasting meals on a low salt low protein diet but these hit the spot.

Hubby wanted to re-create a childhood favorite, the Bean Burger from S.W. Tookie's in Seabrook, Texas. It traditionally had refried beans on top of a burger with crushed Fritos and Pace Picante to finish on top of it all.

Ours started with a Brioche bun, a grilled 1/3 pound burger topped with American cheese, jalapeno refried beans, crushed Fritos, and then a freshly roasted Hatch pepper on top.

He said it reminded him of the burger at Tookie's, but kicked up a notch or three.

Aaah..I love good pork BBQ. The pork makes for best taste and the sauce is also key. For a brand BBQ sauce I like 'Sweet Baby Ray's' which actually has a nice simple somewhat spicey tang. Slaw is always good with BBQ'
