Slow simmered chili...2 pots, one red with beef and one green with pork. I'll fix some burgers on the grill to go with. I'm hopeful there's enough leftovers to get a few more meals out of later in the week, but my kids are spending the weekend with me, so it's a stretch.
Where I live is about a 4 - 4 1/2 hour ride to the coast. One advantage of this is the proximity to good, fresh seafood. I bought 2 pounds of gulf shrimp caught last night from a couple guys selling it out of their truck in the parking lot of the gas station. I sauteed some of it in butter with fresh garlic and tossed it with some linguine. The rest will end up in some gumbo next time the kids are over.
Had some leftover chili in the refrigerator so I made some enchiladas with it. Stuffed them with pepper jack cheese. Two slices of sweet potato pie for dessert.
