Olfactophilia. It's not specific to smelling hats, but it'll do. There's also "kapelophile", but that's essentially "a lover of hats" and does not take smelling or fetishizing them into account, so it's not quite as accurate....I love the smell of steaming felt I must say (I wonder what the scientific name for a hat-smelling fetish would be).
