"Tea", is an afternoon drink, cucumber sandwiches, an' all that. A beer that may interest you, is "Espresso Beer". A porter, with more than a hint of the Java bean, ideal for those early morning kick starts!

Alternatively, "Cosmopolitans" are now being served, at "Ocean's".........your usual table is reserved!

I am quite fond of coffee stout and partake in it often, yum. Last night I had something unusual, pumpkin beer! Guess I'm on an 'odd beer flavour' kick. I'm still recovering from the daiquiri you made me and the purple haze!

I could never quite fathom out, why one would partake in a drink that is a combination of both a suppressant and a stimulant? A similarity could be drawn with a Vodka and Red Bull (not to my taste, I might add), but it does seem a little pointless, having something that will keep you awake, when you have a hangover!

I'm pleased that the Daiquiri and Purple Haze were to your liking. They obviously had the desired effect, as you left your coat behind in the club, I'll drop it back to you, soon.

It was nice to see M. Cointreau II, put in appearance over the weekend too, I'll send him your regards.

I made Mai Tais for the first time last night. Tasted nothing like the ones I've tried at bars. I'll definitely make them again, and never again bother trying one from a bartender who is more fitted to opening bottles of beer.

What is the recipe you used---the original.
I do it this way:

"Old Way" Mai Tai Formula
  • 1 ounce Fine Jamaican Rum (15 or 8 year old)
  • 1 ounce Martinique Rum (St. James)
  • 1/2 ounce Orange Curacao
  • 1/2 ounce Orgeat Syrup
  • Juice from one fresh lime (about 3/4 ounce)
  • Shake vigorously.
  • Add a sprig of fresh mint
I know you might not have mint at this time of year but....;)

I deviate slightly from Trader Vic's formula I know. That would be:


The Original Formula - 1944
  • 2 ounces of 17-year old J. Wray & Nephew Rum over shaved ice.
  • Add juice from one fresh lime.
  • 1/2 ounce Holland DeKuyper Orange Curacao.
  • 1/4 ounce Trader Vic's Rock Candy Syrup.
  • 1/2 ounce French Garier Orgeat Syrup
  • Shake vigorously.
  • Add a sprig of fresh mint
I doubt the rock candy syrup and a single nice rum would be any less good though. it might be better but I would have to find that kind of rum and rock candy syrup. ;)

Sort of the first one with Triple Sec instead of Curacao. Damn! and I missed the mint- Yes I still have:p ;) Next time! Using Ron Barcelo rum.

You can use either triple sec or orange curacao. The curacao is a bit sweeter to me though.
Mint is the sort of garnish that makes it smell good when you get the glass to your face. ;)
Barcelo rum is fine too. I have used Montecristo and Myer's dark together with good results too. :cheers1:

No problem, I'll have the Maître d' attend to the matter, immediately.

The imminent arrival, of one Sig. Luxardo, together with his partner Sig. ra Creme Violette, suggests that the next beverage on the agenda, is possibly, or to be more precise, probably, going to be of the Aviation variety.

The last of the homemade Sloe Gin was sampled again, last night, and very nice it was too.

As always, we look forward to seeing you at the Club, later.

You can use either triple sec or orange curacao. The curacao is a bit sweeter to me though.

Triple Sec typically has a neutral spirit base, while Curacaos are usually built on a brandy, making them a bit sweeter.

And, it was a long, long day at work, so the wife and I stuck with the Martinez tonight... followed up with a Casino (Aviation minus Violette).

2 measures Tanqueray Gin
1/2 measure Luxardo Maraschino Liqueur
1/2 measure freshly squeezed lemon juice
1/4 measure Crème de Violette

Shaken with ice, and served in a Martini glass, with a Maraschino cherry.

It's been a long week...........!

It works well for me too, although some recipes omit the Crème de Violette, which is similar to a "Casino", although from memory, a "Casino" has orange bitters included?

The Crème de Violette, can be tricky to obtain, but you definitely miss the taste, if it's not included.

Tonight, for a change, a couple of "Margaritas".
