Super Girlfriend is warming up her pie-making muscles for next week. She'll bake six or more pies next week - coconut custard, pumpkin and pecan - but gave this first-time-for-her Nutmeg-Maple Cream Pie a go this morning:


Update: For lunch today, I had a salad with no dressing, a small piece of plain grilled chicken breast and grapes for desert, then I woke up from that nightmare and had my real lunch - a giant glass of Ovaltine to wash down an even more-giant piece of Nutmeg Maple Cream Pie.

It is outstanding. If you are familiar with Chess pie, think of this as a Chess pie with a nutmeg-maple flavor. Very simple, fresh, clean tasting. Can't wait to have more later today.

Wonderful! I suspect that they will make a lovely accompaniment to.my lovely West Indian soup. (Spinach & sweet potato, with peanut butter. I'm eclectic )

Sounds like a perfect combination.

Okay, caught her with a free moment.

This is the recipe she used:

And she adds a cupish of corn kernels which she folds in with the cheese and jalapeños (and she ups the jalapeños "to taste"). Also, she sprinkles a little cheese and corn kernels on top (as well as one jalapeño slice - as you can see) before she bakes.
