I'm thinking that the CHALLENGE in skunk preparation is in the cleaning. Of course, if you catch it yourself, make mistakes cleaning it yourself, you'll probably be perfectly free to eat it yourself.

My Father grew up in the heart of the depression, born in 1919. He NEVER hunted or took me hunting. He was too tired of eating Raccoon, which is says isn't that great. He did mention that eating Ground hog was good. My wild game cookbook says that Ground hog meat is good because they eat green leafy vegetables just like cattle, seems to work out at least from Dad's prospective.

The truth is that if you are down and out you can eat many "free" things. Like grubs. I wouldn't do it, but when my husband was in the USMC he ate some pretty icky things!

In Costa Rica, there are some small insects that, eaten raw, taste just like black pepper. (Yes, I tried a live one.) They make a good seasoning if real pepper isn't handy.
