I think tripe is just too unprocessed - my mum used be given it boiled by her mum. She hated it with just as much gusto as the scrambled pig's brains she was occasionally served too...
Faggots is minced off-cuts and offal, especially pork, with herbs and bread crumbs. It's cheap food but rather nice.
