But it is possible to dry-cure bacon (after the salt-cure and smoking), so it would be just as legal as any other dry-cured meat.
I will be starting the salt-cure for a trial batch next week ...

I have approximately a minute or few to sleep time once I lay me head down. And once I am asleep nothing awakens me until 4:30 every morning.
That is unless I have slept six plus hours straight, then it is a headache which screams at me to get up.
