Yeah it's kinda itchy. I tried mine on initially in a short sleeve shirt and immediately realizied, this is a long sleeve shirt jacket. Super warm though.

That email is good stuff! So some of the USCG commands do Private purchases directly and do not go through the supply system. That would make the deviations from the specifications make sense.
However, these 3 Coasties appear to have the synthetic collars on them. Not as lucky as some I guess...
Here's the specs. They are very clear. You can see where Goat (KK-L-170) is on the list of deleted materials, and Cow is added. Also the entire "Outer shell" paragraph 3211 is deleted and replaced with Cow hide specifically (KK-L-162) on the following page:

Yes be careful with the iron but it does work. I have done it successfully. Try a hidden small area first. Every leather is different. Cover with paper and never put the iron directly on the leather. Go little by little at a medium temp and don't expect to get the wrinkle out in one pass.

Probably not. I don't think that the USN department would purchase G-1s with real mouton and issue them. It is no longer in the specs. Mouton has been superseded by Dynel synthetic. The jacket would be disqualified for issue because it is not up to the specs listed in the DOD.
I wouldn't worry about the black mouton. Some of the Cagleco issue jackets from the 1950's had black mouton. I have photos somewhere I will try to dig up. The black mouton is historically accurate although rare. Another jacket I should have not sold!
