It's a common problem for me. Most of my leather jackets (purchased second/third hand) have needed about 1-1.5" removed). I use a local small business that specialises in repairing bike leathers. Typical cost is £20, turnaround less than a week.
As you say Baron, the Type A-1 mil spec is pretty well documented, but the sports/cycling/civilian flying/windcheater jackets have been around for ages in all sorts of configurations.
The comment about A-1 purists probably relates to historically accurate choice of hide (i.e. Capeskin), number of buttons, position of pockets, etc.

The fit about your chest/shoulders/arms looks fine, but the flare at the navel suggests that if the jacket hasn't been cinched then it needs to be (as that's not a flattering cut and it wouldn't really diminish when layered.

I've owned both BR N-1 jackets in the regular and sea water wash versions. The latter is a slightly heavier fabric (a little closer in weight to an original), but with a significantly coarser lining (which resembles the original less closely).

I have some off cuts of jungle cloth from shortened sleeves. Shall I drop one in the post to you for practice?
Tricky. I was about to suggest stencil and paint, but jungle cloth is pretty absorbent and I'd worry about bleeding unless it's a relatively dry brush/sponge.
