All the phenomens you described in your question seem to be totally normal for a jacket of this age and use.
You actually put the jacket to the purpose it was built for.
The only thing that would MAYBE bother me would possibly be the issue with the collar but seems to be an easy fix anyway...
I where you i'd go with a ANJ3 - mainly a G1 without the mouton collar ...
In general i like the G1 over the A2 but in summer the mouton bothers me so i ordered a ANJ which totally does it for me.
As for dimensions in the beginning i customized almost every jacket. Nowadays i tend more to...
Not that much experience so far ...
The weather got ridiciously warm after i took the pics - now it dropped again so a chance for me to wear it more often - hopefully
Thats a version from BOB DONG with full hooks and a zip underneath ...
this particular version was in production for a couple of months only and discontinued as far as i know
Photos are from 2019

The specific jacket i wear was a trade in on another forum i visit. I think the fact that it has been used on a sub makes it kinda special which is also the reason that the price/tradevalue was relatively high...
fit is "N1 fit" for me and spot on - i don't think it should be too trim anyway
the point is if it feels "right" for you???

This is how my original A2 looks like ...
Size is a "Large" (42 - 44) - i'm 1.90 weight is 100 kgs
I'd go with the advice of some folks before: return it and check for an original jacket. There are still available relatively easy and reasonably priced - makes more sense than a repop for me...
i personally hate zippers on boots as well - the look of those buttons needs some time to get used to it though
thickness of the leather makes the "buttoniung procedure" kind of special - or?
