My 2 cents:
A jacket with Vincenza hide is no jacket for riding so:
No shoulder gussets on a Vincenza jacket.
Standard sleeves
non zippered or no hand warmer pockets.
HWM collar
I always remove the leather pulls on the sleeve zippers.
Definitely no Windflap on a Vincenza jacket.
Dark Seal Vincenzo or Seal.

Gotta tell ya I'm anxiously awaiting your final product. I want to do a sheene as well. I've been himing and hawing about a Cossack, 30's HB etc. The sheene tho has a functionality and look I really dig...

I've added Midnight Blue to the list of possible hides.

So far it's
Vicenza (probably Dark Seal)
Kangaroo
Midnight Blue CXL

Can anyone else think of any other leather choices?

Oil pull HH is awesome, really nice texture.
I wouldn't use for riding though.
My first (and only Aero for the moment) is brown Oil pull HH and it feels great, super comfortable and lots of character since the beginning. If they have it in dark seal I think it would be really cool on a Sheene.

I would choose Vincenza HH (ask for grainy hides if you want a smooth jacket out of the box). In Sydney you will get more chances to wear a lighter jacket. And Kangaroo sounds much cooler if you are not in Australia.

Yes indeed. It is really nice, very smooth as you can imagine and probably very durable too.
I really like the depth of colour and it's a nice contrast with the leather.

If your other jackets are cotton drill lining this is a good alternative and very convenient in warmer climate like us here in Oz.

The more I think about it the more I like the idea of a Sheene in dark seal Oil-pull HH, and with red sateen lining could be epic!

Will be interesting to see the samples (if there is any left). Does anyone know if it is a heavy as the regular FQHH?

I had a midnight blue bike jacket for some years. No one ever commented on the colour - it's pretty close to black.

That's my concern Seb, that it's so close to black that it may just as well be black. Kinda defeats the purpose I guess.

It is different. It is more of a cool black. It isn't as if it will turn heads, but I think people will notice it as an interesting looking black. I always thought it would be better in a big coat, like a Mariner or Barnstormer where I suspect the larger amount of leather would make the bluish undertone visible.
