Here it is:

Mexican Baked Penne

1lb ground beef or turkey (we use turkey)
3 cups salsa of your choice of heat level
1 tin (19oz or so) black beans, rinsed and drained (you can use red kidney beans if preferred)
1 cup frozen corn niblets
3 cups uncooked penne pasta
3 cups shredded cheese (cheddar or Monterey Jack)
*You can add your own Mexican spices if you like, but it's not necessary, especially if you use a quality salsa.

Preheat oven to 350F and grease a 9 x 13 inch baking dish (we use glass)

Cook ground meat in a skillet until "not pink", crumbling it as you go, 5 to 7 minutes.
Drain any excess oil, and add the salsa, beans and corn, stirring for another five minutes or so.
Cook the penne in boiling salted water until tender but not mushy (al dente). Drain well and return to the pot.
Add the beef/bean/corn mixture to the pot and gently mix with the pasta.

Spoon half the pasta mixture into the greased baking dish and spread evenly. Sprinkle with half of the cheese.
Top with the remaining pasta/meat/bean mixture, spread evenly, and top with the remaining shredded cheese.

Bake for 35 - 40 minutes or until it is bubbling.

Two adults and two girls, 10 and 8, couldn't finish it, about 40% was left over. It can be prepared as far as a day in advance, but in any case if you have the ingredients, it takes about 20 minutes to get to the oven!
