What's for Dinner?

We are in the last two days of another Orthodox fasting period ...vegan except for a few days when fish is allowed. Tonight we had faux hamburgers. The patties were made with black beans, roasted yams, walnuts and spices. They were very good (recipe from Oh She Glows) . tasted great and held together well. I think we shall keep these in the menu rotation.

The kids are over for the weekend so I picked up a couple of pounds of pulled pork from the closest local bbq place struggling to stay afloat during all the covid mess. Brought it home and heated up some tater tots to go with it.

It sure would be nice to have a place that sold top notch pulled pork and/or brisket. Sadly, we are an area lacking in quality eateries. We have a few really good places, but nowhere near enough to make me happy.

I am fortunate to have a good one located about half a mile from my home. It also happens to be one of the oldest in the city. I hate that they, along with all the other fine establishments around here, are going through such hatd times. A few good ones (including the local po-boy and seafood joint) have closed their doors permanently. Whenever this blows over and things get back to "normal" the culinary landscape is going to be a lot leaner, not to even speak of the bars and entertainment venues.

But enough gloom and doom for the evening. Tonight's repast will be TACOS!! Homemade beef ones, with refried beans rich with bacon grease, arros con maiz, guacamole, queso fresco, and shredded cheddar. My girlfriend also brought over some grilled salmon for anyone (her) who wanted a leaner, healthier alternative. Also plenty of ice cold silver bullets because the walmart had 24 packs on sale stupid cheap this afternoon.

Beef tacos tonight! Obviously a common theme in my life at least when posting.

Tacos are the one food I could most everyday. Fish, beef, pork, prawn, chicken....tex-mex with lettuce/cheese, central american with salvadorean coleslaw, onions and peppers, or just shredded cabbage, sour cream or yogurt.....if you do all the combinations and permutations there could be an entire month's worth of meals...different one every day. Add in pico de gallo or guac.... I am in my happy place.

Tonight is the last night of our month of vegan eating. My wife is making a lentil dahl with homemade naan bread. My contribution was to pick up 6 veggie samosas from the local S Asian takeout
