Quesadillas are common Saturday lunch fare here. Leftover meat (chicken, steak, beef, pork carnitas, ham - whatever I have), cheese, maybe onions, beans, corn, cilantro. Dipping in salsa, or sour cream. Mmmm.They are worth it.

Sounds like a nice Saturday to me.Quesadillas are common Saturday lunch fare here. Leftover meat (chicken, steak, beef, pork carnitas, ham - whatever I have), cheese, maybe onions, beans, corn, cilantro. Dipping in salsa, or sour cream. Mmmm.
Oh, and I use whatever tortillas are on hand - corn or flour.
