Found a large Boston butt roast on manager's special at the grocery store this morning, so I'm going to slow cook it in enchilada sauce + extra spices, onion, garlic, & make tacos for dinner. Flour tortillas, avocado, tomato, cheese, lettuce & mexican sour cream. Yum!

(Not Taco Tuesday! Not ground beef! Yay!)

Sub freezing temps outside and feeling a little under the weather, I fixed some homemade garlic/ginger chicken soup with fresh lime, beansprouts, and green chilis.
