Mexican Lasagna

Chilli layered with flour tortillas topped with spicy cheese sauce. And a side dish of guacamole with really thin garlic bread slices. Double Yum!

In short, take a chicken, cut him down the middle (remember to tell him sorry for doing this) season him with garlic, rosemary and any other herbs you like. Get a big skillet and a pot filled with cans or two bricks, pour some olive oil, garlic and herbs in the skillet, when its hot, put the chicken, skin down in and quickly put the pot or bricks on top. Let the chicken cook this way for about 20 25 minutes, then, turn off the heat, flip the chicken over and bake in the oven on 350 for about an hour, maybe a little less. The skin is crunchy and flavorful, the underside is moist and yummy.

I just read that recipe, I'd do without the brown sugar and oranges though, I do have a great recipe for chicken that does use brown sugar and oranges if anyone is interested

I do most of the cooking around here. Guess my most famous dish is sukiyaki. A Japanese friend taught me how to make it decades ago- part of the secret is beer and sugar!;)

My boyfriend does most of the cooking...well he is a Virgo after all.

But when it comes to Tex Mex, my Soft Cheese Enchiladas are pretty good. And you can't go wrong with homemade flour tortillas.

Other than that party food and sweets are my specialty.

My sweet&spicy broiled chicken and sticky sweet rice is always a favorite around here. Brownies and Chocolate Chip Cookies as well.

That's about as much culinary expertise I give around here, although I can cook. The perks of living with a chef... except when you have to clean up after one. lol
