Shirt collar interfacing

Dear group, I have found someone who is a whizz at sewing and she says that she can make me a detachable shirt collar if I give her one to copy. I have a Van Heusen spear point collar which has seen better days that would fit the bill. My tunic shirt is a TM Lewin in fine white Poplin. I can source the Poplin easily enough but from what little I know about such things the collar needs to have an "interfacing" to give it a bit more body do to speak. So, what exactly is interfacing?
Is there some kind soul who could explain what it is please, and if possible supply me with a link so I can see what it is? Even better would be a link to a UK supplier. Thanks very much chaps.
