we use to eat cow's tongue a lot , and also could make a cow tongue sandwich , I also enjoyed head cheese sanwiches tasted like pig's feet
As far as Spam goes, I have fond memories of the year we had a baked Spam for Thanksgiving. I am not especially fond of turkey -- it's dry, I don't like the taste all that much, it takes far too much effort to prepare, and there is always way way too much of it -- but a Spam studded with cloves, glazed with a mustard-brown sugar sauce, and baked in the oven is genuinely good eating with absolutely no waste. What's not to love?
We used the recipe that used to be on the back of the can:
1/3 cup brown sugar
1 tsp water
1 tsp mustard
1/2 tsp vinegar.
Mix ingredients in a bowl. Score Spam in a diamond pattern, stud with whole cloves, apply glaze with a spoon or a brush. Bake in a 375-degree oven for 20 minutes, basting as needed. Slice and serve!
