OK, now I feel stupid....what is COW?

Been looking through the archives and see repeated mentions of "COW", with regards to tutorials, etc. So after about 20 frustrating minutes looking at photos of actual bovines, I'm beginning to think I'm missing something here.

COW, anyone?
