Apparently, the meat cutter at this store is so lazy, he just slaps a sticker on bulk meat, and puts it out for sale.
I have no butcher skills or training. I do have a knife. A cheap knife.
I carefully removed the shoulder blade. Separated the meat at the seams. Cut the larger side into steaks. Then made strips of meat with the smaller pieces.
Chinese barbecue pork. Same thing you see hanging in Chinese markets. They have a special oven, and technique. I have no special equipment or anything which resembles culinary training. I have sauce in a bottle. I steam the meat to tenderize it and render off fat. Then add sauce and roast the meat to caramelize it.
