I exist in your head
Years ago (I think it was) Eddie Bauer sold a down insulated liner in a pseudo fedora style hat.

Is there anything like that now? Not the whole hat but a liner that is down insulated and retrofittable into whatever hat you want to wear that day?

I remember seeing a Filson tincloth packet hat with a thermal liner and earflaps that could be flipped down or tucked up inside.

In terms of something to add in to a pre-existing hat, I suppose you could try something like this - a thermal helmet liner designed for cyclists and motorcyclists. It'd certainly keep your ears warm, though I suspect you might need a fedora up at least a size from your usual to make it viable, which might kill the point of it being removable.

TBH, here in London most of the time when it's cold enough that I need my ears covered, it's also too windy for a brimmed hat, so I tend to find something like a ushanka a better option for a hat with earflaps.

Details are important. The add-on ear warmer I have from Buckaroo Hatters does it all, including assuring the hat stays on in hurricane winds. The well-thought-out device is designed to very minimally affect the fit, too, if at all, while keeping your ears toasty warm.
