How do you like your eggs?

There are many different ways to have them and everyone has their fave.
I like mine served similar to a porridge with a bit of milk,butter,and sugar.Some,like them cheesier or more salty than sweet.There's some recipes on that site I posted.

I'm not talking about the kind your mother used to make around St. Patrick's Day. Rather, I'm speaking of military-issued galley food.

I guess I am more diet conscious I like eggs benedict, eggs sardou, eggs with crispy (on the outside) corned beef hash or, when I can find it, crispy scrapple!

Oh, BTW, fried or poached over the corned beef or the scrapple as well...

I work with a number of Brits and I'm often teased about the idea that eggs can be cooked in so many ways. To many of them it is a big joke that one America might order sunny side up and another might order over easy.

Me, I love my eggs many ways: over easy, poached, scrambled, hard boiled (in egg salad) and of course in an omlette.

And as special treat, the local family restaurant used to make something called "Tony's Special". It was scrambled eggs with cream cheese and green onions. It sounds odd, but it was heavenly!

Though, woodyinnyc, yours sound lovely. I'll have to try that some time.

My wife always cooks them when we have fried eggs, but I always cook when we have scrambled. I've spent years trying to reproduce my grandma's eggs. I put a little olive oil in the pan, and never use milk. Grandma cooked in bacon grease, but Cassie is fatally allergic to anything made from pig.
