I know what you mean, it's smooth but has little obtrusive character, it tastes of guinness and that's it. I mean it was invented for folk who drank four pints for lunch. The bars used shut from 2pm to 4pm so the shift labourers would return to work the next shift. That was still the law in Dublin & Cork when I grew up. I also think it mixes well with something more hop or malt, even apple, smoothes the throat. But young barstaff no longer serve apprenticships, the unions are broken, and they just can't pour for muck. Draft guinness has problems too. They used clean the vats at least three times a year using a slightly different yeast seasonally to maintain the Guinness taste. The autumn yeast, rarely used unless it was very cod weather, was always frowned on by the working man, but diagio heard talk that if served cooler it tasted alright, no, if the autumn was cooler it brewed ok, nevertheless they brewed it and introduced blue label (export) or Coldflow here in about 2001, served colder, then using smoke and mirrors replaced all Guinness taps with Coldflow. Now they don't clean the vats four times a year, and all draft guinness is Coldflow but called Guinness. It's ok, it does taste like Guinness but not as we knew it.Karl,
Tried a new version of a Half & Half tonight: Sam Adams Octoberfest with Guinness on top. Very subtle & I liked it so much I had 3 more. I realized why I like Guinness as a Porter sometimes is because it doesn't have that stale coffee taste.
