How do the manufacturers cope with this?
Probably more of a concern in the manufacturing of the leather than in the assembly of the jackets. Leather does outgas (you can smell it) and the chemicals it outgasses could potentially be toxic or cause cancer, I suppose. Hanging a few old jackets on the wall long after they were made isn't going to cause a significant problem for anyone.
