Man I tried to do my own dry rub on some ribs...absolute disaster and a real shame. Tasted like eating the contents of a vacuum bag. And I can grill to the nuts. Ribs are a different animal though. You need to finesse the Hell out of them. I love dry ribs but can't get it right to save my life.
It's all about the BBQ pit. And the secret's in the sauce.;)

You have to follow thru. My wife is essentially vegan and I made these, thank God, only for myself. But I could see in her eyes a subtle smirk, an "I told you so" of sorts. Couldn't let that stand. I fell on my sword, insisting they were both delicious and incredibly moist.

My experience of bbq in North Carolina resulted in us repeatedly attempting to make pulled pork. We'd get somewhere in the ballpark but never quite right. Our evening in the Woodlands Restaurant set the bar very high, almost as high as our cholesterol levels by the end of the evening, but every so often we have another go.

Some smoked pulled pork is about the finest food you can eat! Man that's the kind of thing I like to slow cook on long, cold and rainy days in November. Throwing back some cold ones and watching the Bears lose. Again.

I'm in Atlanta at the moment, and I'm told Fox Brothers is good. They even have Frito pie :).
Planning on dinner tomorrow. Fatt Matt's is a close second, I hear.

So, no BBQ recipes then...?

I'm a big fan of the Amazing Ribs method : http://amazingribs.com/recipes/porknography/perfect_pulled_pork.html . They also have recipes for whichever sauce you like (in North Carolina there's a big divide over Eastern/Vinegar and Western/Tomato) but honestly it's so good I usually end up eating it 'plain'. It's a pretty foolproof recipe, too: just keep your grill/smoker/whatever reasonably close to 225* F for as long as it takes.

There's a New York guy in San Francisco who makes Brisket. He refuses to put on sauce, and honestly his meat doesn't need it. But he does offer some on the opposite counter.

My brother in law just made some amazing dry rub ribs last weekend. Very unusual spices. Indian influenced for sure. The were perfect. He even paired the meal with an incredible cocktail that had rum, cumin and brown sugar. The whole thing was delicious.
I felt like a chump. Last time he and his wife came over I destroyed our meal. Soggy green beans, burnt ass chicken. I just drank too much that day to prepare anything but a phone call for pizza... this thread has me fired up to ruin another rack.

As I recall The Rendevous in Memphis has a mail order service for their BBQ, although it would be prohibitively expensive to have it sent to the Big Man in Japan.
