It's the small strip of leather connecting the collar to the body as in the pic on the right side.

It's an Aero W535 ac-21996 original.

The jacket on the right is a Rough Wear W525 ac-18091 original.

Both from John Chapman's United States Flight Jackets CD.

I can attest to the smoothness of G&B's horsehide when new, but after a bit of wearing it will start developing some character. One piece of my right sleeve developed a definite jerkiness after a bit of use, while the jacket as a whole began displaying definite grain. They're smooth as a baby's bum out of the box, but give it some time and that will change!

I agree, my horsehide G&B A2 was very smooth when it arrived. Now a year later it has developed some great grain in various places.
