I've been making a fish recipe called Matelote these days. Bottom fish like seabass, blackfish, and porgy all do well with this. It's a whole lot of leeks and it's relatives (onion, chives, shallots,,,), maybe some mushrooms, with a claret wine sauce where the fish is poached, then all of it thickened with flour before serving. I'd be happy to offer up my recipe if anyone would like.

I would very much like to read how you prepare bottom fish. Would grouper meet your test for bottom fish?
