During my routine ebay browsing, a jacket caught my eye:

I love the collar on this one. It's not something many people think about, I guess, but when the cross-zip jacket is zipped all the way up, often times the collar doesn't lay flat and straight, as it does on this one. To me, this is the perfect collar for this type of jacket.

Oftentimes, the right side of the collar has a hard time folding over the the lapel, and the two sides of the collar don't meet in the center under the adam's apple, but instead have a gap of an inch or more.

Agreed. I've given this a lot of thought. It's amazing how many crooked collars I've seen even among the most premium of makers. Even Vanson has trouble getting it right. Hard to find a model with a good collar, like the Levi's you've posted. I know that jacket, it's been around for a while now.

That's one of the reasons I always say that Schott makes a damn fine cross zip. They do the collar right. Not on all models, but on most.

Just curious what that collar would look like if snapped and zipped?
Would it not look more like this?
