Could Aero Reproduce this Californian?

Go with the basic 1930's Half Belt deluxe design;

Ask Aero to go with a straight line yolk like on the Stockman (albeit it with a one piece back rather than two...something Aero has done for me in the past);

And a straight chest pocket like on the Highwayman rather than the angled one on the standard Half Belt designs;

Have it done with their medium weight horsehide (smooth or jerkey finish) or goat hide, and you have what you are looking for.

I don't work for Aero, but I am pretty sure that they would be willing to do this. As noted, Aero is very good about allowing adjustments to their basic designs..and these are all "standard" features on different designs they offer anyway.

In my experience, Aero also only charge more for mods if it costs them more to do it, not for every deviation from the standard pattern. One advantage of the jackets being made to order as opposed to selling stock items.

Do you think the yoke's on these jackets are straight across or are a little scalloped? I just can't tell if its the curve of the back making it look like this or an actual curved cut.

Do you mean use a single piece, and create a fold across the leather? So it looks like a 2 piece?

No.
If you look at the back panel of the Stockman, it has a seam running down the middle from the yolk to the lower hem;

It was made from two separate pieces of leather.

If you look at the back of something like the Highwayman, or the jacket the OP is looking to re-create, there is no seam down the middle. The back panel is made from a single piece of leather.
