It's a nice idea that this thread has been revived, to give a bit of balance to all of the meat orgies that take place 'round this time of year! I've been a veggie for 20-odd years, for purely ethical reasons, and have only had a bit of "dead creature" ^^ in my mouth a couple of times by accident (which I unceremoniously spat out, was ill, and brushed my teeth for about a half hour!). It wasn't a difficult lifestyle decision for me, and I've not missed the stuff a bit (yes, I will eat ersatz and have not a qualm about it).

Does anyone have any easy, what I mean by easy is 3 or 4 ingredient recipes you would like to share.
My favorite is a vegan dish that smells and tastes like chicken of the sea tuna.
1 can of drained chick peas
3 tablespoons of vegan mayo
1 tablespoon of sweet relish
Mash the chick peas its okay if its a bit chunky and mix the rest of the ingredients together. This is great on crackers or for sandwiches.

I call it veggie rice...for obvious reasons ;D
About a cup of cooked leftover rice
one carrot chopped
one celery chopped
some green onions
salt and pepper to taste
butter.
Heat skillet, add butter, when butter has melted add veggies to cook down, add rice, salt & pepper, mix all together and enjoy!

Hello everyone! It's my first post in here, so let me introduce myself - my name is Dorota, I'm Polish by nationality, currently living in Dublin, and I'm vegetarian for last 20 years or so.
And as for quick and easy veggie dishes - how about honey glazed parsnips? All one needs is 3-4 parsnips, tablespoon or two of clear honey and salt and pepper to season. Parsnips are to be peeled and quartered lenghtways ( I usualy go for pieces size of French fries), placed on greased baking tray, drizzled with honey and seasoned liberally with black pepper and tiny bit of salt. And then all it takes is to put the tray in the oven (200C/390F) for about 20 minutes. It makes quite nice, sweet & spicy side dish.

^^or maple syrup for the vegans :). I usually cut them rather chunky, but I'll try your idea next time (French-fry size)! Yum!

Welcome to the Lounge, Dorota!

My 3-ingredient recipe is creamed kale (I get cravings for the stuff) - cook the kale 'til tender with the tiniest amount of water needed (so most of it cooks off and kale will be pretty dry at the end) and faux chicken stock powder (I suppose veg stock powder would work, too), then add single cream to taste. Fini!

I also love to cook kale with garlic and onions, a splash of olive oil and balsamic vinegar, and a few dashes of liquid smoke to finish.

I was a vegetarian for about 20 years. I learned quite a bit about nutrition, hunger, appetite, politics, economics, ethics, morality, compassion, spirituality. After I had learned enough I returned to being omnivorous with a deeper understanding and appreciation of the food that I eat to live. I eat with reverance and understanding. It took me 20 years to realize the appropriate lessons. It might have taken a lifetime, or not.

Marinate tofu over night in grapeseed oil (or any oil you prefer) with cumin, garlic powder, and a little salt and pepper. I never actually measure the ingredients, but probably use at least a teaspoon of cumin and garlic powder for a 12.3 oz box of tofu. Dinner the next day is quick and easy: Mix your favorite salsa with rice (black bean and corn salsa---yum), fry up the tofu and add it to the rice. Makes a great burrito.

I was a vegetarian for a couple months and then got sidetracked. I am not vegetarian at the moment but eat a lot of meatless dinners. That said, I am thinking about going back to it with an official starting date (as opposed to just happening to eat decreasing amounts of meat) this year for my birthday and sticking to it.

It's hard for me because it would be an ethical/environmental stance. I rather like the TASTE of meat, it's not that I don't have carnivorous inclinations. And while everyone says vegetarian is cheaper, I haven't found that to be so. So cost and taste are against me. But from a footprint standpoint I think it would be the right thing to do.
