Pits a-goin'! Started with a little pecan and some mesquite. Got the two roast on. Will throw some sausage snackers on shortly. Rumor is some grandkids are headed this way.

JP, Basil the bbq wonder mutt is currently directing his attention to some of the farm cats. I'll havta keep an clear eye on him that he doesn't decide to have a little too much fun with a kitten!!!

It looks like you had a grand time! Thank you for sharing! The pork looked great! Nicely done!

Yesterday I grilled two racks of St. Louis ribs and dozens of teriyaki skewers. The ribs took over an hour and the skewers nearly that long. My friend didn't put enough charcoal and wood chips in the BBQ. I had to amp it up later when he wasn't looking. :p Either his temperature gauge was off or I was trying to cook at only 150 degree heat. :p

Apologizes for my long absence, not that many would have noticed. Haha.
I did utilize my Weber on Thanksgiving Day for smoking some chickens. This year the table only had 3 total present at it for the meal. So I did not prepare a grand amount. Nonetheless, the chickens came out great. I smoked two. One had nothing but the skin on and turned out excellent. The other chicken had a nice dry rub that added a bit more flavor and color.

Perhaps Christmas will have a few more items on the smoke for dinner.

Heh, well, living where I do, in central Mizzou, BBQ'ing, grilling, or smoking is a way of life! :)

For most outdoor cooking, I use a komodo cooker from Bayou Classics. We've had this thing for over 10 years now and it was the first ceramic egg available here in Jefferson City. Its equally good for smoking ribs and shoulders, or searing steaks.

I use a SS gas grill for dogs and burgers when in a hurry. During the summer we cook 80% of our meals out on the patio. It doesn't heat the house up and its a great excuse to drink beer! :cool:

Some mighty fine looking cooking rigs! And good looking food too! Below are a few photos from my wedding in the end of October 2014. The first is getting the firewood (local variety of scrub oak, this tree had been felled in a lightning storm a year earlier) all cut down to size, then of firing up the pits that morning at the Observatory, and finally, of slicing open that brisket:

Well, it's started again with yesterday's pre-Mothers day festivities. And yes, Basil the BBQ dog is ever vigilant in his duties!!!!




Used a different wood yesterday. The old timers that lived here decades ago used it so I tried it. Courtesy of last weeks big wind! It's known by about a dozen colloquial names here, but the official name is Gum Bumenia. And it worked great. Reminds me of post oak in smoke aroma and taste! Delicious!!!!

Today we'll be grilling one of our favourites, tandoori chicken.

We use a Napoleon grill, cast iron grilling surface. I just cleaned out a couple of summers' worth of carbon (I need to schedule regular cleaning!).

MC, if you like tandoori, get Rick Stein's India book and do his tandoori fish, or you can do it with chicken. I'm bonkers about Indian food and have quite a few cookbooks on the subject but Rick Stein's book is out of this world. Really worth getting if you like Indian grub.

Honestly MC if you like Indian food pick Rick Stein's book up, you'll cook the best Indian food you've ever had and that's including from restaurants. It helps if you have a good Indian grocery shop nearby as a few ingredients in some of the recipes are a little esoteric if you're not from India, but even if not, you can order anything online these days. Even with me up in Arctic Norway, I can still get hold of everything either from the local Asian food shop or online.

The more esoteric, the more original! There is nothing worse than the dumbing down of food. We are not too far from Indian groceries, we can stock up as required/able to.

A bit more than a month ago the grocery store had a sale on chicken. 10 pound bags at 25cents per pound. This was the result:





My wife and I have moved a bit further up into the mountains recently. The views are spectacular, and while my first priority was to stock the kitchen, and have the dinning room set up (I figured that setting down to a relaxing meal despite the chaos of the rest of the house would be a welcome comfort), I really miss the barbecue. I've got to fire that thing up again.

Had a great Memorial Day barbeque last night with my parents, uncle, his wife, son and grandson. We swam in the pool all day, smoked a whole chicken, two slabs of ribs and four Bobek sausages. We drank all the beer we had, and most of the lemonade too. For dessert we polished off the pie and ice cream. Had a lot of fun.

Sounds keen! While I didn't barbecue for Memorial Day, I attended one this evening. It was an odd feeling not to be minding the cooking. I brought spicy iced tea along, and a good time was had all around. My son Virgil, now 7 months old, has discovered a fondness for a spicy, mustard potato salad!
