I've never had any problems creating sepia toned photos using the Hue/Saturation application in my Photoshop.

...that's my trick too-
up with the red, yellow and magenta and down with the saturation

Adjusting the contrast can help to make an 'old photo' look too.

Judicious use of the dust/scratches filter perhaps too.

if you convert to Greyscale then you can go to Mode under the Image menu and select Duotone and choose what ever color you want. And if you click on the box with the line thru it that is the Curve so you can put points along the line and adjust how much color you want in the highlights, mid-tones and shadows. Black generally being one of the colors you'll want.
But if you are planning on printing it convert it back to CMYK.

If you have photoshop CS theres a filter called sepia and you can change the % of sepia when using it.

I have never used actions before... how do they work?

actions are quite nifty. they are little mini hmmmmm ... what's a good word here, little mini things that incorpate several menu steps all at once, automating the "actions".

for example. we have specific actions for sizing pics for the newspaper page - 1 column, 2 columns etc. we click on a button and it automatically sizes the pic to the correct size instead of the photog having to go into 'image size' and changing the size manually including res for printing.

i built one for converting pics to black and white using the LAB lightness channel, a much better looking greyscale than just going straight to greyscale. one click of the button and the photo is changed to black and white and sharpened.

so actions take many steps or even just one and convert them into one click of the mouse or one F key.

if you check out that site i mentioned there are LOTS of cool actions. you just have to be careful that what you do doesn't look as if you used a cutesy action!

most work on layers so you can adjust the final look to your taste.
